Thankful Friday #3

I am thankful for my wonderful husband--who surprised me yesterday at work by coming to see me with flowers :) and no he did NOT do something wrong.
I am thankful I got a 98 on my A&P test--especially after I saw the grades around me!!
I am thankful gas is still FALLING--it was 2.19 in Ft Wayne this morning!!!
I am thankful for the pre-made frozen meals that I made with my in-laws last weekend because it makes me feel like a better wife since I don't have the time to cook right now.
I am thankful I haven't had any spasms in my neck/shoulder since Wed--I don't think the thyroid liked having an ultrasound done earlier this week. Maybe I can get a good night of rest :)
I am thankful for the weekend so I can get some rest.

HAVE A WONDERFUL WEEKEND EVERYONE!! I think we might be getting a jump start on Christmas shopping--when you work 34hours a week and take college classes you try to get as much done as you can, especially when your finals are Dec 18 and 19...yuck!!

Mouse Trap

A mouse looked through the crack in the wall to see the farmer and his wife open a package. What food might this contain?' the mouse wondered - - he was devastated to discover it was a mousetrap. Retreating to the farmyard, the mouse proclaimed the warning : There is a mousetrap in the house! There is a mousetrap in the house!

The chicken clucked and scratched, raised her head and said, 'Mr. Mouse, I can tell this is a grave concern to you, but it is of no consequence to me.I cannot be bothered by it.'

The mouse turned to the pig and told him, 'There is a mousetrap in the house! There is a mousetrap in the house!' The pig sympathized, but said, 'I am so very sorry, Mr. Mouse, but there is nothing I can do about it but pray. Be assured you are in my prayers.'

The mouse turned to the cow and said, 'There is a mousetrap in the house!There is a mousetrap in the house!' The cow said, 'Wow, Mr. Mouse. I'm sorry for you, but it's no skin off my nose.'

So, the mouse returned to the house, head down and dejected, to face the farmer's mousetrap . . . alone. That very night a sound was heard throughout the house -- like the sound of a mousetrap catching its prey. The farmer's wife rushed to see what was caught. In the darkness, she did not see it was a venomous snake whose tail the trap had caught. The snake bit the farmer's wife.
The farmer rushed her to the hospital, and she returned home with a fever. Everyone knows you treat a fever with fresh chicken soup, so the farmer took his hatchet to the farmyard for the soup's main ingredient. But his wife's sickness continued, so friends and neighbors came to sit with her around the clock. To feed them, the farmer butchered the pig. The farmer's wife did not get well; she died. So many people came for her funeral, the farmer had the cow slaughtered to provide enough meat for all of them.

The mouse looked upon it all from his crack in the wall with great sadness. So remember the next time you hear someone is facing a problem and think it doesn't concern you, ---- when one of us is threatened, we are all affected and can help, if only through prayer. We are all involved in this journey called life. We must keep an eye out for one another and make an extra effort to encourage and help one another.

Everybody wants my job!!

So I have some pretty interesting conversations with patients over the phone, some are pleasant, some are funny and some are angry!! I thought I would just share one of the conversations I had recently.

Patient: So I was wondering if I could get one of those tag thingys that you know you can hang on your mirror. So when its cold outside I can have a one of those front row parking spots when I go to Walmart.
Me: Ok I will check and we will call you back.
**the patient did have other question, that was one I think she was trying to sneak in**
Callback Conversation:
Me: Hi ----- you will need to call your primary care doctor to see if you can get a handicap tag because we do not authorize for patients to get those.
Patient: Ok, I will!!

defective wife

My poor husband is going to think he has a married a defective wife!! When we first got married I ended up with gallstones and had to my gallbladder out within the first 4 months of our marriage. His question to my parents "Does she come with a warranty?"
Now I have a multi nodular goiter on my thyroid, seriously?!?! Maybe the person that asked me if I was expecting just noticed that my neck is getting bigger??

Success

I decided to make the recipe from the post below. I made a few alterations with the recipe because it seemed like it was going to be a lot of work!! I used ground chicken instead of chick breast, I think that was a lot easier than trying to do what the recipe said. After reading the comments of other people that have made the recipe I made some adjustments with the sauces. I doubled the stir-fry recipe and cut the special sauce in 1/2 and the sugar and water in 1/2 again. I also forgot to put the mustard in but we don't really like mustard so it didn't make a difference to us and I also left out the mushrooms because those aren't our favorite either. Also if you have a pampered chef chopper works wonderful at mincing the onions and water chestnuts.

It was very tasty and Jeremy's first comment was you are in trouble!! That means I will be making again. I think the next time I will double it and freeze 1/2.

to satisfy the craving or not to satisfy the craving??

This spring most of the women on Jeremy's Steffen side went to the Women of the Faith Conferenece(we refer to it as WOF and yes you can make a lot jokes with the way its pronounced)in Columbus,OH. While we were there we ate at PF Chang's--so YUMMY!!!! Anyways I have been craving their lettuce wraps for about a month and since the closes PF Chang's is in Indy its probably not likely that Jeremy would drive to Indy just for that. But thanks to wonderful power of the Web I found the recipe on my first search :) Now the question is do I actually go the store and by the ingredients and then take the time to make them??

P. F. Chang's Chicken Lettuce Wraps

SERVES 2 -3
Ingredients
3 tablespoons oil
2 boneless skinless chicken breasts
1 cup water chestnut
2/3 cup mushroom
3 tablespoons chopped onions
1 teaspoon minced garlic
4-5 leaves iceberg lettuce
Special Sauce
1/4 cup sugar
1/2 cup water
2 tablespoons soy sauce
2 tablespoons rice wine vinegar
2 tablespoons ketchup
1 tablespoon lemon juice
1/8 teaspoon sesame oil
1 tablespoon hot mustard
2 teaspoons water
1-2 teaspoon garlic and red chile paste
Stir Fry Sauce
2 tablespoons soy sauce
2 tablespoons brown sugar
1/2 teaspoon rice wine vinegar
Directions
1.Make the special sauce by dissolving the sugar in water in a small bowl.
2.Add soy sauce, rice wine vinegar, ketchup, lemon juice and sesame oil.
3.Mix well and refrigerate this sauce until you're ready to serve.
4.Combine the hot water with the hot mustard and set this aside as well.
5.Eventually add your desired measurement of mustard and garlic chili sauce to the special sauce mixture to pour over the wraps.
6.Bring oil to high heat in a wok or large frying pan.
7.Saute chicken breasts for 4 to 5 minutes per side or done.
8.Remove chicken from the pan and cool.
9.Keep oil in the pan, keep hot.
10.As chicken cools mince water chestnuts and mushrooms to about the size of small peas.
11.Prepare the stir fry sauce by mixing the soy sauce, brown sugar, and rice vinegar together in a small bowl.
12.When chicken is cool, mince it as the mushrooms and water chestnuts are.
13.With the pan still on high heat, add another Tbsp of vegetable oil.
14.Add chicken, garlic, onions, water chestnuts and mushrooms to the pan.
15.Add the stir fry sauce to the pan and saute the mixture for a couple minutes then serve it in the lettuce"cups".
16.Top with"Special Sauce".

Does anyone just want to make it for me and bring it over sometime?? *haha*

Are you expecting?? Need I say more!!

Seriously--someone had the nerve to ask me that!!

I have lost 10lbs for nothing.....

This is not what I was wearing but I do not have any other full length pictures. Jeremy(along w/ the sister-n-law wanted to borrow what I was wearing) has assured me over and over again that I do not look pregnant but it does knock the ole self esteem down about 50 notches!!
