Homemade Marshmallows

So I don't know if is the fact that Jeremy and I watched Julie and Julia last week but I have the urge to try new things :) Today I made homemade marshmallows I found the recipe here: www.ourbestbites.com and from the sampling I took from the bowl I do have to say they are tasty!!

(I tried out the new camera again--I think I need to sit down and read the manual)

Pray for Saige!!!

Pray for Saige!!!!
Saige is the 4 yr old niece of my co-worker, she was just diagnosed with leukemia. Saige will have to go down to Riley every Wed for Chemo and sometimes will have to have further testing like bone marrow biopsy, spinal tab, and of course lots for blood work.
What have I been up to??
-school
-work but will hopefully I will be able to go down to 3 days a week soon( I am praying it works out!!) I have to work 24hrs a week to still have insurance
-had a birthday
-have a freezer full of meals
-painted the shed
-cleaned up the flower beds
-dog/house sat for a week (for my parents)

Just Curious...

Just curious what everyone budgets for their groceries?? I do about $60 a week but I call it my Walmart fund(cleaning supplies, personal/health, food, etc). I don't just shop at Walmart though, I hate their produce selection!! I know that I could do better but I did try $40 a week although that seemed a little low.
I am probably one of those obsessive people when it comes to the budget. I am always trying to find ways to cut corners :) especially since we won't have two incomes like we do now if I get into the nursing program this spring.

So I have been wanting to learn how to sew, you know with all of the free time that I have!! Anyways I stumbled upon this website today and they are giving away this super cute quilt, just head over to their website to see the details or click on quilt giveaway button I added on the left side of my blog:)

Just something I whipped up

I was trying to figure out what to make for a snack for Bible Study after a couple of days of thinking this what I whipped up(my coworker gave me the basics but I added cinnamon to the mix)...

What you need: Peanut Butter, Plain Vanilla Yogurt, Cool Whip and Cinnamon.

What to do: Mix 2 large spoonfuls of Peanut Butter(i am guessing 1/2-3/4 cup), small container of plain vanilla yogurt(6 oz), 2 heaping 1/2 cup fulls of Cool Whip plus a little more(maybe 1 1/3 cup), heaping 1/8 tsp of Cinnamon plus a sprinkle or two. So I don't always measure things I just add until it taste good :)

Serve with: Apples and bananas

People have been complaining........

because I haven't updated my blog in a LONG time!!! What have we been up to??

*We had 5 weddings in four weeks but only made it to 4 of them. Two were out of the state and two were held on the same weekend.
*We went to lakes over the 4Th of July which is why we missed the 5Th wedding.
*We were not home for three weekends in a row, I was so glad to be home last weekend :)
*I am done with this semester!!! I am not sure if I would recommend taking Microbiology in the summer it is very condensed but miraculously I pulled through with an A.
*Our computer was at the computer doctor last week and then the Internet would not work but it is all fixed now :)
*My nephew and niece did Awesome at the 4-h fair this year!!! 2 champions, 1 blue, 2 reds with their calves and 1 showmanship winner :)
.........and i would have had pictures but my camera is not working right now;(

I think that is pretty much it now it is time to catch up on the house but I have month until school starts again!!

trying to get more organized

Thankfully this semester is only 8 weeks long but during the 8 weeks I will be working 5 days a week and going to class two mornings a week for 4 hours(each class day). This means that I have to get more organized in the meal planning area and the rest of the house.

Meal Menu for next week(keeping it simple):

Sunday: Marinated meat on the grill/salad
Monday: Easy Chicken Quesadillas
Tuesday: Hamburgers on the grill/salad
Wed: Subway
Thurs: Pizza
Friday: haven't decided yet probably grill something

Next weekend I won't have to worry about cooking because we have wedding(S) and family things :)

Shipshewana

Yesterday my mom and I went to shipshewana to get our flowers and other things for our landscaping. I wish I would have taken my camera with us so you could have seen how full the car was by the end of the day!! We had two trees-Korean dwarf lilac and a Japanese red maple-, 3 bird's nest spruce, 4 flats of flowers, a hanging basked, an azalea, trumpet vine, honeysuckle vine and pepper plants!! I sent picture text to my dad and Jeremy that said keep on working, not very nice I know :)

We also played with some Yorkie puppies, so CUTE!! I sent another picture text to Jeremy telling him I found a really good bargain. He's response: ha ha I don't think so but I love you........I tried!!

School's out!!

School is out for 3 weeks :) Yes I am taking 1 or 2 summer classes--crazy I know!!

So it is AMAZING how much can get done when you are not working on your online class or studying for the next Anatomy quiz or test and working full-time!! I had made a list of things that I wanted to get done by the time summer is over and is already cut in half :)

1. Paint inside of Kitchen and Patio doors--check
2. Hang new picture in dinning room--check
3. Get outlet and light switch covers for the ones that are missing(well the old ones were nasty)--check By the way don't turn the screw to tight because the covers can crack *oops I was just wanting all the screws to be turned the same way(can you say OCD)
4. Clean the House--has been started!!
5. Work on the backyard--has been started but has a long ways to go!!(see before pictures below)

and that was all done yesterday on my day off--again I say amazing!!

What is left??
1. Finish some of the red paint in Kitchen and Dinning Room--(touch up and I never did around the window--its less then a 1/2 inch space)
2. Paint the shed
3. Get vent cover for family room(not sure if there ever was one)

So these are mostly before pictures. The front has a lot more landscaping now but this just gives you a look at our crazy project--that would be called our home! I think that Jeremy's parents that we were nuts and mine saw a diamond in the rough! I wish I would have taken before of the inside but I didn't--I think Jeremy's parents did but I don't know if they still have them--oh well!! After we first removed our massive bushes in the front it was funny to watch people pass right by our house because they didn't recognize it :)
*Also suggestions of colors to paint the shed would be apperciated...Sorry no contest poor college student that wouldn't remember to mail out a prize :) Don't worry the flea house....I mean dog house is gone!!

doorbell+8:45am=not good

So I have today off since I have my final and who did my husband forget to tell me was coming this morning at 8:45---Gerber's to spray the lawn.

8:45am--hear the doorbell..normally I ignore it because if I don't' know someone is coming then mostly likely its some sort of solicitor. BUT I think man its early for that and then see a lawn mower spraying the front lawn. I think crap!! I haven't brushed my teeth, my hair is crazy, still in my PJ's and Roxy is out back. What to do first?? Run up stairs put a more appropriate shirt on. Run back down stairs open the door slightly-quickly grab the bill and say I will get Roxy back in quickly. I was worried about getting her back in because all morning she would come to the door and then run as soon as I opened--she thinks its a fun game, I think its super annoying!! AND what kind of watch dog doesn't bark at strangers but barks when I come home or Jeremy comes home!!
8:50am--call the husband and say thanks for telling me the lawn people were coming this morning so I could have looked a little better!!

*now normally I go to work on Tuesdays so I am not that upset with Jeremy just more in embarrassed because I looked horrible--trust me my hair gets BIG through the night!!

I think I can make it until next Tuesday--MY LAST DAY OF THIS SEMESTER!!!!!I feel like this semester is just drrrrraaaaggggiiinnnggg on and on. I am going to try to finish up my on-line class by this weekend so I can focus on studying for my Advanced Anatomy final.

For instance, a person who is sufficiently somnolent may experience microsleeps. However, objective cognitive testing should be done to differentiate the neurocognitive deficits of brain disease from those attributable to tiredness.

In-laws+ultrasound pictures(of my thyroid)+April Fools Day= A scream, a hug, realizing what day it was and lots of a laughter on both sides of the joke!!!

*then the oldest sister-in-law calling while we were at the in-laws, jer answering the phone and telling her we couldn't keep it in any longer but there might be a surprise in November--we might be in big trouble the next time we see her!!!!

It was a fun April Fool's Day!!

one month until WOF 2009 with the Steffen Women!!

Recipe time

so i like to try out new recipes, here is one from Everyday by Rachael Ray:

"Here's a Meat Pie You can Handle"

extra-virgin olive oil
red bell pepper(we used a green bell pepper because they were cheaper at the store)
small onion
ground turkey(i used ground chicken but i think you could use hamburger also)
tomato sauce
Worcestershire sauce
salt and pepper
store-bought pizza dough(Pillsbury)
mozzarella cheese

Brown meat. Heat olive oil in a large skillet, add chopped bell pepper and onion and cook until softened. Stir in meat, canned tomato sauce(just add until you think its good), a little Worcestershire sauce and salt and pepper. Cut store-bought pizza dough into quarters(unroll the dough first easier to work with) try to stretch into 8-inch round(harder then you think it should be :). Spoon the filling onto the dough rounds on a baking sheet, top with cheese, then fold over the dough and pinch to seal. Bake at 400 until pockets are golden, 15-20 minutes.
