Success

I decided to make the recipe from the post below. I made a few alterations with the recipe because it seemed like it was going to be a lot of work!! I used ground chicken instead of chick breast, I think that was a lot easier than trying to do what the recipe said. After reading the comments of other people that have made the recipe I made some adjustments with the sauces. I doubled the stir-fry recipe and cut the special sauce in 1/2 and the sugar and water in 1/2 again. I also forgot to put the mustard in but we don't really like mustard so it didn't make a difference to us and I also left out the mushrooms because those aren't our favorite either. Also if you have a pampered chef chopper works wonderful at mincing the onions and water chestnuts.

It was very tasty and Jeremy's first comment was you are in trouble!! That means I will be making again. I think the next time I will double it and freeze 1/2.

to satisfy the craving or not to satisfy the craving??

This spring most of the women on Jeremy's Steffen side went to the Women of the Faith Conferenece(we refer to it as WOF and yes you can make a lot jokes with the way its pronounced)in Columbus,OH. While we were there we ate at PF Chang's--so YUMMY!!!! Anyways I have been craving their lettuce wraps for about a month and since the closes PF Chang's is in Indy its probably not likely that Jeremy would drive to Indy just for that. But thanks to wonderful power of the Web I found the recipe on my first search :) Now the question is do I actually go the store and by the ingredients and then take the time to make them??

P. F. Chang's Chicken Lettuce Wraps

SERVES 2 -3
Ingredients
3 tablespoons oil
2 boneless skinless chicken breasts
1 cup water chestnut
2/3 cup mushroom
3 tablespoons chopped onions
1 teaspoon minced garlic
4-5 leaves iceberg lettuce
Special Sauce
1/4 cup sugar
1/2 cup water
2 tablespoons soy sauce
2 tablespoons rice wine vinegar
2 tablespoons ketchup
1 tablespoon lemon juice
1/8 teaspoon sesame oil
1 tablespoon hot mustard
2 teaspoons water
1-2 teaspoon garlic and red chile paste
Stir Fry Sauce
2 tablespoons soy sauce
2 tablespoons brown sugar
1/2 teaspoon rice wine vinegar
Directions
1.Make the special sauce by dissolving the sugar in water in a small bowl.
2.Add soy sauce, rice wine vinegar, ketchup, lemon juice and sesame oil.
3.Mix well and refrigerate this sauce until you're ready to serve.
4.Combine the hot water with the hot mustard and set this aside as well.
5.Eventually add your desired measurement of mustard and garlic chili sauce to the special sauce mixture to pour over the wraps.
6.Bring oil to high heat in a wok or large frying pan.
7.Saute chicken breasts for 4 to 5 minutes per side or done.
8.Remove chicken from the pan and cool.
9.Keep oil in the pan, keep hot.
10.As chicken cools mince water chestnuts and mushrooms to about the size of small peas.
11.Prepare the stir fry sauce by mixing the soy sauce, brown sugar, and rice vinegar together in a small bowl.
12.When chicken is cool, mince it as the mushrooms and water chestnuts are.
13.With the pan still on high heat, add another Tbsp of vegetable oil.
14.Add chicken, garlic, onions, water chestnuts and mushrooms to the pan.
15.Add the stir fry sauce to the pan and saute the mixture for a couple minutes then serve it in the lettuce"cups".
16.Top with"Special Sauce".

Does anyone just want to make it for me and bring it over sometime?? *haha*

Seriously--someone had the nerve to ask me that!!

I have lost 10lbs for nothing.....

This is not what I was wearing but I do not have any other full length pictures. Jeremy(along w/ the sister-n-law wanted to borrow what I was wearing) has assured me over and over again that I do not look pregnant but it does knock the ole self esteem down about 50 notches!!

Thankful Friday #2

By the time Friday rolls around I am thankful because that means I get to sleep in on Saturday!! I am always dead tired when I get home from school on Friday, its hard to get motivated to get anything done :(
*I am thankful that Jer was able to sell a couple of cars this month with the crazy roller-coaster of a hide that the economy is on.
*I am thankful for all the friends/family we have that are always inviting us to something even when I am just wishing for some downtime.
*I am thankful we are healthy!! When I really think about it could have been Jeremy with the broken leg or some other injury at Sunday Football.
*I am thankful that Doug is at home recovery from his surgeries and broken leg
*I am thankful that I have a dog even though she likes to bark just to hear herself bark!!
and I am a SUPER thankful gas is under $3.00 a gallon :)

This is Buckeye Nation

We went to Columbus to watch the Buckeyes play some football, the game wasn't super exciting but it was still fun!! The first picture isn't the best but I am trying to talk Jer into getting his hair styled like #92 but he isn't going to for some reason!! The rest of the pictures are just some that we took throughout the day. We had amazing seats thanks to my Uncle Don :)

I have been tagged

So I am bad at th whole adding images thing--haven't had time to really figure it out. I am suppose to say 7 random facts about myself and "tag" 7 more people but basically eveyone that I know(that has a blog) has been tagged!!

1. I love to watch football--sometimes when Jeremy gets home for work on Saturday I am watching a game and not getting anything accomplished!!
2. My dad's side of the family has over 100 people--and the man(grandpa) that helped start the madness will be turing 94(or it could be 95, I am a bad granddaughter) on Monday
3. I do not have my gallbladder, tonsils or adenoids.
4. I am not a morning person
5. I have to eat about every 3-4 hours if I don't I get SUPER cranky
6. I have to sleep with a fan on(not the ceiling fan but a real fan) because as Jeremy says I am like a furnance when I sleep
7. I HATE to clean but I still do it

Hope everyone has a wonderful weekend--I am going to be watching Ohio State beat Purdue in person ;)

Discovering a little store called CVS

So maybe everyone else in the world has discovered this store and the amazing ways you can lower your grocery bill but if you haven't let me explain why you need to know about it!
First thing you need to do is give up the $1.75 and buy the Sunday paper it is worth it. Next go through the paper and pull out all of the Manufacturer coupons(the ones on the slick paper that you have to cute out) plus pull out all of the grocery store/drug store ads(meijer, target, walgreens, cvs, kroger, kmart,ect). I usually do this while Jeremy is watching football but you can do this whenever it works for you. Than I cut out all the manufacture coupons and file them in my little coupon organizer. Yes I am the annoying person that you are stuck behind at walmart but it is worth it.
After I have all of this organized I go through the CVS ad because they have these fun things called Extra Care Bucks. When you are looking through the ad you will notice it might say Gatorade 5 for $5 plus you will get $2 in extra care bucks so you are really getting them for 5 for $3. Now the neat thing about ECB's is you can use them on your next trip basically like cash(excludes a few things so read the fine print example: can't use on prescriptions, stamps or gift cards). Another amazing thing is you can use your manufacturer coupons when buying the specials that you can get ECB's on. So you can things for FREE or overage when you include the ECB's that you get back!! I once spent $36 but actually only paid $5 out of pocket plus got ECB's back on that trip--AMAZING :) If I have completely confused you go to moneysavingmom.com and click on CVS 101.
Now back to the other ads I had you pull out go through those because Walmart will match any of those prices and if you can remember what you have in your coupon organizer you can also get things for FREE there too(not on every trip). I write the prices from the other store on a separate pad of paper and just keep the ads in my purse--sometimes if you get a cranky cashier they will make you show them the ads but that is very rare. Also sometimes Walmart will have a better price so I double check their prices with what I have wrote down. Exceptions for Walmart they will not do any buy one get one free's ;(
But remember it is not saving money if you are just buying because it is on sale not becaue you need it!!
